exact calorie needs

I am a diabetic and competed in amateur level bodybuilding contest 5 years ago. Since then I have put on 25 pounds, mostly around my middle. I have just started doing elliptical 5 days a week first thing in the morning on an empty stomach and weights 5 days a week at 1 PM. Diet is Key!!! The calorie calculator is too broad. How do I determine the amount of calories to get my metabolism screaming? And the percentage of protein, carbs, and fat? I am 5 10” 215 #s
